Fish With Mexican Style Rice

Crispy crumbed fish fillets with a Mexican style rice and beans.

  • 550g packet frozen I&J Original Crumb Fish Fillets
  • 1 teaspoon olive oil
  • 1 clove garlic, crushed
  • 250g punnet cherry tomatoes, halved
  • 420g can Edgell Four Bean Mix, drained
  • 2 x 250g packet Mexican style rice, heated following packet directions
  • ¼ cup fresh coriander leaves, for garnish

Step 1

Cook frozen I&J Fish Fillets following packet directions.

Step 2

Meanwhile, add olive oil, garlic and cherry tomatoes to a frypan and heat for 3-4 minutes or until warmed, stirring continuously. Remove from heat and toss with Edgell Four Bean Mix and Mexican style rice.

Step 3

Serve fish with Mexican style rice and beans. Garnish with coriander.

Tip Pre-packed flavoured rice makes a great accompaniment to family meals.
