Ingredients

  • 425g packet I&J Light and Crispy Fish Fillets - Original Crumb
  • Baby cos lettuce leaves, for serving
  • Salsa:
  • 1 mango, finely chopped
  • ½ cup finely chopped cucumber
  • 1 tablespoon finely chopped red capsicum
  • 2 spring onions, finely sliced
  • 1 tablespoon chopped fresh chives
  • Squeeze lemon juice

Instructions

Step 1

Cook I&J Light and Crispy Fish Fillets following packet directions.

Step 2

To make the salsa, gently toss ingredients together. Serve fish with mango salsa and cos lettuce leaves.

Tip Chopped fresh coriander can be a substitute for chives.
