Step 1
Sprinkle chicken breast pieces with seasoning. Heat oil in a non stick frypan over medium heat. Panfry chicken for 5-6 minutes each side or until cooked through. Rest and slice.
Step 2
Prepare brown rice following packet directions.
Step 3
Assemble your salad by placing all ingredients, except spring onions, in segments. Drizzle with dressing, sprinkle with spring onions and serve immediately.
Tip
For an easy chipotle dressing, simply combine ΒΌ cup of chipotle aioli with 1 tablespoon of water.
