  • 2 chicken breast fillets, cut in half horizontally
  • 1 tablespoon Mexican seasoning
  • 1 tablespoon oil
  • 450g packet microwaveable brown rice
  • 400g can Edgell Black Beans, drained and rinsed
  • 420g can Edgell Corn Kernels, drained
  • 1 avocado, sliced
  • 200g punnet cherry tomatoes, halved
  • 4 spring onions, sliced
  • Chipotle aioli dressing, for serving

Step 1

Sprinkle chicken breast pieces with seasoning. Heat oil in a non stick frypan over medium heat. Panfry chicken for 5-6 minutes each side or until cooked through. Rest and slice.

Step 2

Prepare brown rice following packet directions.

Step 3

Assemble your salad by placing all ingredients, except spring onions, in segments. Drizzle with dressing, sprinkle with spring onions and serve immediately.

Tip For an easy chipotle dressing, simply combine ΒΌ of chipotle aioli with 1 tablespoon of water.
