A chunky tomato and red capsicum salsa with a hint of fresh chilli is delicious spooned onto I&J fish.

Ingredients

  • 500g packet frozen I&J Crispy Battered Fish Fillets in Beer Batter
  • 1 large tomato, finely chopped
  • 2 tablespoons finely chopped red onion
  • 2 tablespoons finely chopped red capsicum
  • 1 teaspoon finely chopped red chilli
  • 2 tablespoons tomato sauce
  • Baby cos or salad leaves for serving

Instructions

Step 1

Cook frozen I&J Crispy Battered Fish Fillets following packet directions.

Step 2

Meanwhile, combine tomato, onion, capsicum, chilli and tomato sauce. Season with salt and pepper.

Step 3

Serve fish fillets with salsa and baby cos or salad leaves. Season with salt and cracked pepper. Place any extra salsa in a bowl and serve separately.

Tip For a milder onion flavour; place chopped red onion in a small bowl and cover with warm water for 10 minutes, drain and use as required.
