| 210g can John West Red Salmon, drained 1 large or 2 small pita breads 50g Danish fetta cheese 1½ cups baby rocket leaves ¼ cup fresh mint leaves ½ small pear, sliced 2 tablespoons honey Pinch cinnamon Pistachio nuts for garnish |
Drain John West Red Salmon and flake into chunky pieces.
Place pita bread under a hot grill until crisp. Spread fetta cheese over pita bread and arrange rocket, mint, pear slices and salmon on top.
Combine honey and cinnamon in a small bowl, heat in a microwave oven for 5-10 seconds to warm. Drizzle over salad and garnish with pistachio nuts.
Rocket can be substituted with baby spinach leaves and the pear with apples.
