Bean Couscous with Lamb

A delicious lamb dish with couscous and a tangy yoghurt mint sauce.

ingredients

1 cup couscous
2 teaspoons grated lemon rind
1 cup boiling water
410g can Edgell Sliced Green Beans, drained
2 tablespoons chopped fresh parsley
4 lamb steaks

Dressing:
½ cup natural yoghurt
2 tablespoons fresh chopped mint
2 cloves garlic, peeled and chopped

instructions

step 1

Place couscous in a heat-proof bowl with lemon rind, pour over boiling water, cover and stand for 5 minutes. Fluff couscous with a fork; gently toss through drained Edgell Sliced Green Beans and parsley.

step 2

Meanwhile pan-fry or grill lamb steaks until cooked. Cut each steak into slices, cover and keep warm.

step 3

Blend yoghurt, mint and garlic together in a bowl. Serve couscous with sliced lamb and yoghurt dressing.
